Also, I do not know where most of these recipes came from originally, but they are not mine! I just like them!

• Fluffy Pancakes •


Ingredients:
- 3.5 cups flour
- 6 tsp baking poweder
- 1 tsp yeast
- 3/4 cups sugar
- 1/2 tsp salt
- 2 cups milk
- 1/2 cup water
- 6 tbsp vegtable oil
- 2 eggs

Instructions:
Mix together all dry ingredients.
Add all wet ingredients and mix until just combined.
Let sit for a few minutes, then mix one more time to reduce lumps.
Drop 1/4 to 1/3 cup of batter onto hot and oiled skillet. Let cook until bubbles stop forming, then flip and let other side cook.

Makes a lot of pancakes, might be good to half this recipe if you are cooking for one.

• Weeknight Curry •


Ingredients:
- 3 tbsp butter or neutral oil
- 1/4 c onion
- 2 tbsp curry powder or garam masala
- 3 tbsp flour
- 3/4 tsp salt
- 3/4 tsp ginger
- 3/4 tsp garlic
- 1 c milk or milk substitute
- 1 c broth
- 2c protein (chicken, tofu, etc) (cooked)
- 1/2 tsp lemon/lime juice

Instructions:
Saute butter/oil, onion, and curry powder/garam masala until onions are transluscent.
Add flour, salt, ginger, and garlic to make rue.
Add milk/substitute, and broth to make gravy.
Add protein and lemon/lime juice.
Cook until everything is hot and serve on rice.

Should take around 30 min.
